We all have been cooking our faces off and trying to have some fun while doing it. So many of my friends and family members are making the big dishes, but what about the sides? This recipe is super simple, extremely cheap and super quick to put together. I promise it will be the perfect pair for so many of the foods you are making this summer, so much so that you will find cabbage added to your grocery list all year long.
I started making this salad to entice my kids to eat more veggies. No matter what I pair this with, it always seems to be gone when I go for my second helping. You can serve this chilled for hot summer days eating outside or room temp because your fridge is beyond full and you're too lazy to make room. No matter give it a whirl and let us know what you think

What do you need 

2 tablespoon of salt (if you are sodium conscious feel free to use less)

1 tablespoon of ground black pepper 

½ large cabbage 

4 tablespoons of olive oil 

1 large cucumber 

1 ripe avocado 

2 cups of vinegar (I use white but if you're feeling frogy have at it with whatever you like) 

1 salad bowl 

1 great sense of humor

And We Begin………

Cabbage. 

1 Wash and peel the outer layer of the large green cabbage

 Dont be a Karen just wash it 

*

2 Cut the cabbage in half. (if you are making this for more than 4 people you may want to use the entire cabbage if not put away and use later for who knows)

 would you look at that knife (Old Hickory)

3 Slice the cabbage thin ( see the pic below, we are trying to make this look shredded; we do not want the cuts to be thick!)

4 Once complete place the cabbage into a large salad bowl

 It puts it where I say or else ill dance on your lawn in a speedo

Cucumber. 

1 wash the cucumber (cause your not a slob and or a dirty person)

 does size really matter ladies 

2 Peel the cucumber. (I like to leave three strips of the skin on the cucumber I feel it gives a better snap and hey its makes it look oh so fancy)

 like your trimming up a runway

3 Slice the cucumber in half… then cut long ways creating small pieces (This isn't rocket science)

4 Once complete add to the salad bowl with the cabbage

Ok look at you go. You get a star, keep it up an you might get more

Seasonings.

*I season the salad prior to adding the avocado. 

1 Add salt

 Thats Salt

2 Add pepper 

*

 Look at you go, your getting it  just like riding a ....

3 Add oil 

*

 Get to the chopper

*

4 Add vinegar 

*

 Look at my feet whats that called?

Mix all together well. (until the oil and vinegar have coded all of the items in the bowl.

Avocado

1 cut the alien egg in half. (avocado)

* Trust me you dont need a pic 

2 remove alien embryo (avocado pit)

 We dont need no stinking pit 

*

*If you have an avocado slicer Boo Yah you know what to do. If not go to step three 

3 Using a spoon, slowly follow the skin of the avocado to gently remove the flesh. It's not hard but will take some finesse. Once the skin has been removed place the flesh pit side down on a cutting surface and repeat on the second half. 

4 Slice the avocado thin and place on the top of the salad. (I mix mine in but you do not have to. If you decide to mix it in do so but very softly. Kinda like you were whispering sweet nothings into my ear)

Booo yahhh…. Now go enjoy your friends and family

If you choose to chill, place in the fridge for 20 min. If not serve that bad boy with whatever you are cooking.

  • I’m not really a cabbage fan but I do like avocado. I made this to go with some burgers this weekend and wow. I could never image this working but it just does. I am putting this one in my back pocket for the next BBQ.
